Another comment about cookware article
A Kitchenboy reader from Australia, Wedo, sent me a nice email about the cookware article. They reminded me that when talking about multi-layer or multi-ply cookware, some of the layers in 5 or 7-ply are there to aid in binding the various metals together. This is true. The point I made in that original discussion was there to make sure my American readers weren’t listening to evil marketing people (i.e. more layers doesn’t necessarily mean better cookware).
Some of the other comments made in their note reminded me of another point. While I spoke of what metals the various handles might be made from, I neglected to mention that the shape and design play an important role. One needs to feel the handle, pick up the piece, feel the weight and see how it works in your hand. Just like a knife, no one else can tell you what feels good.
